It’s not a stretch to say that salted butter and honey is the flavor of Jeni’s childhood. A salted cracker topped with a slice of honeycomb harvested from her grandparents beehives is still one of her favorite treats. When Jeni had the Salty Honey Pie from our friends at Four & Twenty Blackbirds in Brooklyn, it was like time traveling for her. Salty, earthy, sweet, the flavor was begging to be turned into an ice cream. We start with golden Ohio honey with a beautiful floral and earthy sweetness, then add a pleasant touch of salt to rich egg yolk custard. A sprinkling of cornmeal crust pieces lend texture and slight flavor of sweet corn.
